French Onion Soup With Black Truffle Oil

Ingredients

  • 1 ½ lbs. onions
  • 1 tbsp. white wine vinegar
  • ½ tbsp. sugar
  • 1 tbsp White Truffle Sea salt
  • 1 tbsp freshly ground black pepper
  • 2 tbsp. all-purpose flour
  • 8 cups beef stock, hot
  • ½ cup dry white wine
  • 6 slices of baguette
  • ½ lb. Gruyere cheese, grated

Directions

  1. Melt the butter in a large saucepan, then add the onions and cook on low heat, stirring, until golden and caramelized – about 12 to 15 minutes.
  2. Add in the vinegar, sugar, White Truffle salt and pepper, and mix well, stirring to combine. Remove from the fire.
  3. Add in the flour, stir, then add the beef stock and wine. Return to the fire on low, and simmer, stirring, until thickened and reduced. Remove from heat.
  4. Set oven to broil.
  5. Toast the slices of baguette.
  6. Remove from fire and transfer into 6 oven-ready ramekins or oven-proof pots, top with a slice of baguette, sprinkle heavily with gruyere and place into a baking sheet.
  7. Broil until oven until cheese is melted – this will only take a couple of minutes so keep an eye on it!
  8. Now drizzle all your Black Truffle oils on every single ramekins .Serve and enjoy.
